“En el Nombre del Jamón” (In the Name of the Ham) is a bistro-grocery principally dedicated to Spanish ham but not only. It’s also a wine-tasting bar and a gourmet shop, the first of its kind to open at the Yumbo Centre. A brand-fresh concept presented by the young Canarian entrepreneur Ernesto Trujillo.

In "El Nombre del Jamón", you will find a selection of local products and Spanish specialties, including beers, liquor, canned fish, Iberian sausages, cheeses, and jams. For many non-Spanish people, the ham universe remains something unknown, mysterious, and far-off. But Hispanic ham lovers, for their part, could talk to you for hours about all the specific characteristics of each ham, from its color to its taste. As they themselves say, every ham has a soul and a story. This is why it is common in Hispanic culture to dedicate social spaces to the consumption and sale of ham. This is also what the bistro boutique 'En el Nombre del Jamón' offers. In Spanish, they call this a “tasca”, a term a little bit difficult to translate, but you could say, for example, “tavern”, “bar” or “pub”, with the difference that in a “tasca” you can also eat, and generally something typically Spanish like ham, cheese, tapas, and olives.

The first key characteristic of a tasca is its special atmosphere. A tasca is typically small, intimate, and often rustic. The decor is usually simple, featuring traditional elements like aged wood, ceramic tiles, and maybe some framed photos or historical advertisements. In “En el Nombre del Jamón”, the owners wanted a space that was bright and open to the outside, where large glass storefronts predominate on the façade and a clear light fills the interior. The furniture is modern with clean lines, while numerous displays allow visitors to discover at a glance the range of items available for sale or tasting. There is even a presentation of several sliced hams on the counter. The atmosphere is cheerful and friendly, and the tables in the dining area allow patrons to sit down quietly for a moment and take their time to savor their meal.
Like all traditional tascas, “En el Nombre del Jamón” focuses not only on ham but also on wines. While other bars might serve a wide range of drinks, such as cocktails or long drinks, in this bistro-boutique you will find above all a large selection of local wines (white and red), beers, sparkling wines, or vermouth (vermut).
Ernesto Trujillo is the man presiding over the creation of “En el Nombre del Jamón”. This young Canarian entrepreneur, originally from Las Palmas, has a genuine devotion to his profession. He studied the art of ham slicing in a specialized local school and had already gained various professional experiences in different places across Gran Canaria before deciding to open his own establishment. He is the one who welcomes you at the door; he is there every day and is sure to greet you with a welcoming smile. It should be noted that at "En el Nombre del Jamón", you will only find Bellota ham, recognized as being one of the pinnacles of Spanish gastronomy and often considered the best ham in the world ! The term 'Bellota' means 'acorn' in Spanish, and the ham is named this way in reference to the diet and rearing method of the Iberian pig used to produce it, which therefore feeds partly on acorns. Bellota ham benefits from a long curing period, generally between 24 and 48 months (or even more), in natural cellars (bodegas), allowing the product to develop its exceptional texture and flavours. It is a certified designation of origin.
"En el Nombre del Jamón” is a unique spot in the south of Gran Canaria and a first for Yumbo. Ernesto wanted to bring together all the products he loves and was eager to share with others.
